Wash the grains, scald them, put them over the heat in the boiling milk and vanilla, cook until the grains are done.
While it is still hot, stir in the scalded, ground almonds, the sugar and the butter.
Cool well, add the stiffly whipped cream and finally the gelatin, dissolved in the water. The gelatin must not be added too hot.
Pour into a mould. Serve with red sauce.
Rice cream can also be made without gelatin; then use 2 dl heavy cream to 1 plateful of porridge. Do not put into a mould, but straight into a dish or glass bowl. Serve with red sauce.
NB. If cooking the porridge fresh, use 70 g grains to 7 dl milk.
