Mix the flour, salt and baking powder well, and rub in the butter with the fingertips. When it all looks like flour, add the cold water little by little, just enough water for the dough to hold together without sticking to the fingers.
Roll out, not too thin, on a floured pastry board — but use no more extra flour than absolutely necessary.
Lay on a tray with a double edge all around, so that the rim stands fairly high. Bake a nice brown in a hot oven; fill with the following mixture:
Clean the rhubarb, cut into pieces 3 cm long, and layer with sugar in an enamelled pot; cook over low heat until the rhubarb is tender. To 1 litre of the compote stir in the juice of 1/2 lemon and the two well-beaten egg yolks.
Put the pie in the oven until the compote sets, then lay the stiffly beaten egg whites over the filling and leave it further in the oven until the whites are a nice light golden brown.
