In a perfectly clean frying pan put boiling, salted water, enough to nearly fill the pan.
Skim the water as it nears the boil.
Crack each egg carefully and put it in a cup; from here it is carefully slid into the barely boiling water.
Drip a little water over the egg with a slotted spoon, and once the yolk and white have set, lift the egg out with the slotted spoon.
Let the water drain off well, trim away any uneven bits, and serve the egg in a soup plate or - if you like - on toast.
In the latter case, add only a very little butter, a little salt and a little pepper on each egg.
