Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Ox tongue with white wine sauce (1900 edition, p. 161): boiled tongue is peeled and cut into thin slices that steep for ¼ hour in stock, white wine and seasoning; the sauce is brought to a boil, thickened with egg yolks, then finished with chopped parsley and vinegar and poured over the tongue.

En elegant anretning av kokt oksetunge fra «Kogebog for skole og hjem» (1900), der skivene trekkes i hvitvin og kraft og overhelles med en eggeleggert saus med persille og eddik. Koketiden for tungen kommer i tillegg.
Slice the tongue
Peel the boiled tongue and cut it into thin slices.
Steep in wine and stock
Let the slices steep for ¼ hour in the stock and wine together with the seasoning. Then arrange the pieces on a platter.
Thicken the sauce
Bring the sauce to a boil, take it off the heat and thicken it with the egg yolks. Add the finely chopped parsley and the vinegar.
Serve
Pour the sauce over the tongue and serve.
