Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Beef fillet cut from the bone, larded with pork fat, browned and simmered in stock, covered, for 1/2–3/4 hour, served with a sherry-cayenne sauce and macaroni, vegetables and mashed potato. From Kogebog for skole og hjem (1900).

Helstekt oksefilet, spekket med flesk og småkokt i egen kraft, var en fornem middagsrett. Den pikante sausen med sherry og cayenne og tilbehør av makaroni og potetpuré viser den internasjonale inspirasjonen i borgerskapets kjøkken rundt 1900.
Prepare the fillet
Cut the meat out from the bone, pound it lightly and lard it with strips of pork fat.
Brown and simmer
Brown the butter in the frying pan and brown the fillet on all sides. Thin with the boiling water, salt, and let it simmer, covered, for 1/2 to 3/4 hour.
Make the sauce
Brown the butter, stir in the flour and thin little by little with the strained stock, 1/2 to 3/4 liter. Let the sauce simmer for 10 minutes.
Season and serve
Add sherry, cayenne and salt to taste. Serve the fillet with boiled macaroni, vegetables and mashed potato.
