The lentils are boiled tender, ground in a meat grinder or mashed, and mixed with the finely chopped onions browned in plenty of butter, parsley, salt, the cream, and the eggs.
Finally the finely crushed bread, until the mixture is thick enough to be shaped into cakes.
The cakes are browned in butter and served with potatoes and sauce.
The sauce: either browned butter alone, or brown finely chopped onion in butter, stir in flour and thin with potato water (from raw-peeled potatoes) or the cooking water of other vegetables, while you may also gladly serve a stew alongside.
