If the liver — and indeed all offal — has not been soaked by the butcher, or if you slaughter yourself, it must be soaked — and the water often changed — for at least 1 day and night, several times.
Place the liver in 2 l cold water and 1 dl vinegar for 2 hours, peel off the membrane. Cut the liver into thin slices, sprinkle with salt, let it lie thus for 1 hour, dry it, dredge in the mixed flour and pepper, fry light brown in the browned butter.
Clean the onion, cut it into thin slices crosswise; brown in fat or butter, add a little water, add 1 teaspoon of cold butter and place over the steak on the platter.
