Cut the cleaned, boiled or roasted chicken into fine strips and mix with the washed, dried lettuce.
Stir the egg yolks with the salt in a bowl until they are quite white and firm; add the oil a teaspoon at a time, and for every 10 teaspoons of oil add 1 teaspoon of pressed, strained lemon juice. Stir in pepper and 1 drop of onion juice.
Mix the cut-up chicken with the mayonnaise. Serve in very small shells, laid on a dish on which a folded napkin has been placed.
Sprinkle the shells with finely chopped parsley and finely chopped roe (of lobster, crayfish or crab).
N.B. If the mayonnaise curdles, take a fresh egg yolk and 1 teaspoon of salt, stir this white and add the curdled mayonnaise a spoonful at a time. If the mayonnaise is too firm and thick, add a teaspoon of cold water.
