Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Erken & Caroline Steen 1900: caramel coloring made from 250 g brown sugar browned in a pan and diluted with 2.5 dl boiling water, cooled and stored. Used to color sauces brown.

Sukkerkulør er en grunnteknikk i det gamle kjøkkenet: brent sukker løst i vann, brukt til å gi sauser, supper og steker en dyp brun farge uten å tilføre søtsmak. Én flaske hjemmelaget kulør varte lenge.
Brown the sugar
Stir the brown sugar in a frying pan over the heat until it is dark brown. Be careful not to let it scorch and turn bitter.
Dilute with water
Carefully dilute with 2.5 dl boiling water, a little at a time. The mass hisses vigorously, so pour gently.
Cool and store
Let the coloring cool and pour it into a bottle. Use a few drops to color sauces and soups brown.
