Warm the water to 28 degrees, pour it into a bowl, add salt, caraway and the flour little by little, along with the yeast; work the dough well, cover it with a cloth and let it rise for 2 to 3 hours.
Knead the dough again and set it to rise once more for 2 hours. Roll it out thinly and cut out rounds with a pail lid; cut a hole in the middle, and prick small holes all over. Brush with milk and bake, preferably in a baker's oven.
The rounds are threaded onto a wooden pole through the hole and hung to dry under the kitchen ceiling near the stove.
NB. If well dried, it can be kept for months.
