Good, inexpensive meat stock is had by boiling down cracked cooked, roasted or raw meat bones, sinews of, for example, beef, veal, mutton or ham, meat trimmings and so on. From all of this you can obtain excellent meat stock, so long as the ingredients are fresh.
Crack the bones well, wash them and put them on the fire with cold water and salt; boil about 3 hours covered from the moment the pot comes to a boil, skimming well.
Strain the stock into a dish and boil the bones once more with confidence.
It is so lovely to have meat stock "on hand" during the week, and it is a great shame on those who throw the bones away.
Well suited to the hay box.
