Freshly picked cherries, not overripe, are clipped from their stems and placed in ordinary jars or preferably preserving jars.
A syrup is boiled from 300 g of sugar and 1 l of water; this boils for 0.25 hour, is skimmed well, and poured warm over the berries.
The jars are screwed shut or tied so they are completely airtight.
Sterilize at 90° for 20 minutes. Re-sterilize at 85° for 15 minutes within 24 hours.
Cool, wipe dry, and store. Cleaned rose hips are treated the same way.
