0.5 kg of fresh garden strawberries are cleanly hulled, and, if the fruit has ripened on a cushion spread out around the plant, it is not washed, in order to better retain its aroma. But otherwise it is, of course.
The berries are set on ice.
Meanwhile take 1 bottle of good champagne. It is frozen until it becomes fairly stiff.
After pouring 1—2 glasses of maraschino over the berries to keep them from freezing, pour the frozen sparkling wine over them and now let the mass stand on ice for about half an hour, stirring evenly but carefully.
Served heaped up in sparkling-wine bowls (glass bowls).
