2½ litres of fresh strained milk is brought to a boil, and into it you stir a thickening of ¾ litre wheat flour whisked out in ½ litre sweet milk.
Add 1 small slice of butter.
When the porridge boils up, quickly stir in 3 beaten eggs. Once these are well blended in, lift the pot off the heat at once, otherwise the pudding will split.
Then add to the pot 5 full tablespoons sugar, 1 heaped teaspoon salt, 2 full teaspoons orange peel and 1 teaspoon cinnamon. If you like, you can add a small glass of cognac to the pudding.
The preparation must go quickly, otherwise the pudding will set before it is ladled out.
It is poured into small dampened moulds or bowls, where it stands and cools until the next day, when it is turned out onto flat dishes. Red sauce.
