The egg yolks and the egg white are whisked with the sugar for 1/4 hour; now the boiling milk is stirred in carefully.
Return everything to the pot and stir over the heat until it thickens; it must not boil. Remove from the heat, stir for a couple of minutes, and add whichever oil you wish.
For this ice cream take 1/4 l cream, a little vanilla to taste, and sugar likewise. The cream is whipped lightly and folded into the cold custard. Freeze.
The ice can be made more cheaply by adding a cornflour cream and less cream: 1/4 l milk, 1 heaped teaspoon cornflour, 1 dessertspoon sugar, peel of 1/2 lemon. The flour is stirred smooth with a little of the milk. The rest of the milk is heated slowly with the lemon peel, strained into the flour paste, put in a pot and left to simmer gently for a couple of minutes. 1 dl cream is whipped and folded in when the cream is cold.
