Place the cleaned hen in water overnight, then set it over the heat in the boiling, salted water. Skim when the water boils; continue cooking for 1 hour, and now add the cleaned roots.
Take these out when they are cooked, and continue cooking the hen until it is tender; this again depends on whether it is a young or old hen; the latter often need 4 hours, the young ones 1½ to 2.
If they are very old hens, they can be cut up and placed over the heat in cold, salted water. Add the vegetables when the water boils, and take them out when they are tender.
If you want the soup thickened, make a thickening of 50 g butter and 60 g wheat flour, thinned with 2 l of the strained stock.
