Wash the meat in lukewarm water, pat it dry, then rub it with salt, pepper and flour, place it in a pot and brown it all over on a brisk heat in the browned margarine or cooking fat.
Do not pierce the meat, but turn it often so it does not stick.
When it is well browned, add enough boiling water to come halfway up the meat, along with the finely sliced onion and the bay leaf. Let it simmer gently under a tight lid for 2–3 hours.
After 1 hour, turn the meat over and, if the stock has reduced a great deal, add a little boiling water. Continue simmering gently until it is done, then lift it out and serve.
If the stock has reduced too much, so that there is not enough sauce, add a thickening of wheat flour stirred smooth in cold water. Bring the whole thing to a boil and serve with the roast.
