Halvmåner er fylte, brettede kaker med et rikt sviskefyll der selv sviskesteinenes marg utnyttes for smak – et sparsommelig grep typisk for tidens husholdning. Deigen heves med hjortetakksalt (bakerammoniakk).
Make the dough
Stir the eggs and sugar well. Add the melted butter, cream, cinnamon, cardamom and cognac. Finally mix in the flour with the baker's ammonia stirred into it.
Cook the prune filling
Boil the prunes tender in water with sugar. Remove the stones, crack them, scald the kernels and chop the prunes finely.
Boil the filling thick
Return the prune kernels and the finely chopped prunes to the cooking water and boil to a thick mush. Leave to cool.
Fill and shape
Roll the dough out thinly and cut out rounds with a cutter or a large beer glass. Place a teaspoon of filling on each and fold together into half-moons.
Bake
Brush with beaten egg and bake golden on a greased tray in a hot oven.
