The soaked liver is skinned and cut into slices, covered with boiling water that is immediately poured off again.
The slices are dried and chopped together with an equal amount of trimmed pork into a paste, mixed with lung, heart, diaphragm and meat from the head that has been boiled and finely chopped.
For 1 liter of minced mixture, add ginger, salt, pepper, mace and onion to taste, stir in 1 teaspoon potato flour and 2 dl meat stock in which ¾ dl halved pearl barley has been soaked.
Stuffed into narrow casings and boiled in salted water for ¾ hour. The casings should only be half-filled.
Liver and pork may be omitted; instead use 1 dl finely chopped kidney suet.
