Original 1943 recipe

The pumpkin is washed, dried and cut into fairly large pieces; these are pressed in a cloth until dry, and then weighed.
For 1 kg of pumpkin, take 30 g of whole ginger, which is washed and boiled covered for ¼ hour in ½ l of water; then add 4 dl of vinegar and 1 kg of sugar to the water; boil this until the sugar has melted and it is well skimmed.
The pumpkin pieces are added, and it boils with a couple of boil-ups for 4 to 5 min., after which it is taken out and placed in jars.
The syrup should then boil together with the ginger for 8 to 10 min., or until it is smooth and skimmed; then pour it hot over the pumpkin, which is covered with a cloth and left for 8 days.
Set over the heat, and when the pumpkin has come to a boil, take it out and place in jars. The syrup boils with 125 g of sugar per kg of pumpkin, until it is smooth; pour hot over. Tie up at once.
For e.g. 3 kg of pumpkin you need only take double the vinegar, sugar and so on.
