The washed, unpeeled apples, with the cores removed, are boiled with the water.
When this has boiled down well, it is strained and pressed through a colander. For each litre of pulp take 375 g of sugar, refined.
The mixture now boils for at least 1 hour, until it is thick.
Pour at once onto large, flat dishes moistened with cold water, 1 cm thick; do not pour it onto the edges.
Leave in a dry, warm place for 4 to 5 days, cut into suitable pieces, place on clean dishes, leave for 14 days, then turn them over again.
When they are almost dry, sprinkle them with crystallised sugar and store in tin boxes with white paper between each layer.
