Grease a frying pan or small deep pot and fill it with boiling water, in which there is 1 pinch of salt.
Crack the egg carefully into a cup. When the water is at a gentle simmer, put the egg into the pan, letting a little water into the cup so that it takes hold of the egg; quickly turn the cup over so the white comes over the yolk.
Carefully drip the water gently over the egg with a slotted spoon until it is veiled over. Simmer gently for a couple of minutes. Lift out with the slotted spoon.
The egg can also be cracked carefully and slipped straight into the water; otherwise cooked as explained above.
