Peel the onion and rub the bottom of a bowl or dish with it; put the egg yolks in, stir in the salt, pepper and finely chopped parsley, and finally the stiffly beaten egg whites.
Melt the butter in the pan — it must not brown — pour in the batter and stir a little with the spatula. Fry over quite low heat.
As it sets, loosen it around the edges and roll it up from the handle end of the pan with a soft, flexible knife.
Instead of onion, pepper and parsley, 1 teaspoon of sugar can be used, and the omelette is then served with jam as dessert.
