These are not the Danish æbleskiver mentioned earlier in the magazine, which are ball-shaped. Fresh, good apples are peeled, the core is punched out, after which they are cut into thick, round slices, which are dipped in the following batter.
50 gr melted butter is stirred with a teaspoon of sugar and 3 egg yolks, ½ teaspoon salt, ½ teaspoon cardamom, 2½ dcl milk and ¼ kg flour, and last the stiffly beaten whites.
The apple slices are fried in seething hot lard or well-rendered cooking fat.
