Dried or fresh apples can be used; it turns out best with the latter.
Both kinds are boiled until just half tender, lifted out with a slotted spoon and left to cool a little.
A dough is made of 130 gr. washed butter, 3 spoonfuls cream, 2 eggs and 2 spoonfuls sugar and flour, as much as needed to roll it out, about 1/4 kg. is right.
The dough is divided in two; with one part line the bottom and sides of a mould.
The thinly sliced apple pieces are now filled into the mould. Sprinkle sugar and a little cinnamon on top.
Set an upturned cup in the middle of the mould; the thin apple juice collects beneath it.
The other part of the dough is laid over and pinched firmly all around the edge.
Brush over with egg and bake for about an hour in a hot oven.
Serve warm or cold with sugar.
