Clean, wash and skin the fish, and split it from the bone. Cut each half into 2 or 3 pieces on the slant.
Melt the butter and use it to grease the bottom of a flat plate; lay the fish pieces on it, but not on top of one another and not over the edge of the plate.
Sprinkle the salt on the fish and drip the lemon juice over. Lay a piece of white paper, greased with cold butter, over it, and over that again a deep plate.
Set the plate over a pot with boiling water, where it stands about 20 minutes. Serve at once on the same plate on which the fish was cooked.
If permitted, finely chopped parsley may be sprinkled over, and a very little melted butter served alongside.
NB. By steamed fish is meant that the fish is cooked in the steam of its own water. The lemon is used partly to give the fish a whiter appearance, partly for the sake of the flavour.
