Wash the beans well and soak them for 2 days in cold water.
Put them over the heat in 4 l fresh cold water together with the pork, if it is not too salty — a pork knuckle or pork rind is also good, and can then be used for grain sausage later — and cook covered until the beans are quite tender; about 2 hours.
A hay box or paper cooking works excellently, as the beans need a long cook.
Make a brown thickening of butter and flour and thin it with the bean broth.
Put some of the beans into the soup, cook 5 minutes.
Add the spices and the cleaned, mashed anchovy.
The rest of the beans and the sliced fried pork are used the next day (see beans with pork).
