All clean leftover bread from breakfast, dinner and supper, all uneaten crusts and so on should be carefully saved; lay them on a baking sheet and dry them in a moderately warm oven, then pound them, sift them and store them in a dry place.
These are excellent for all breading of meat, fish, vegetables and so on.
Pounded bread is better to use than pounded rusks, also because it is far cheaper, since you get it from bread that would otherwise often be thrown away.
