Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Boiled cauliflower from «Kogebog for skole og hjem» (1900): a firm white cauliflower head is soaked in vinegar water for half an hour, boiled whole in plenty of salted water with a slit cut in the stalk, and served with melted or creamed butter and parsley.

Blomkål var en fin grønnsak i tiden, og boken legger vekt på at hodet skal være fast og hvitt. Eddikvannet holder kålen lys og driver ut eventuelle småkryp – et klassisk husholdningsknep før koking.
Clean the cauliflower
Use a firm, white head. Remove the leaves and cut away some of the stalk.
Soak in water
Place the cauliflower florets down in a bowl of cold water with 1 tbsp vinegar added. Let it sit for half an hour.
Boil
Place the cauliflower in plenty of boiling, salted water. Cut a slit in the stalk so that it cooks as quickly as the florets. Boil tender.
Serve
Serve the cauliflower with melted butter with finely chopped parsley in it, or with creamed butter on the side.
