Blanch the almonds and pound them very fine with 1 egg white, stir in the sugar and the other egg white, and work over a low heat until it comes away from the spoon.
When the mixture is cold, roll it into finger-length strips; if necessary, a little flour may be used to help with the rolling. The almond sticks are dipped in the following beignet batter:
Mix the flour, salt and sugar, thin little by little with the water and beer, and add the butter. It should stand for half an hour, and then fold in the stiffly beaten egg whites; fry a light brown in lard.
NB. This beignet batter is used in the same way for various fruits and also for cooked vegetables.
