Core the apples and peel them neatly and carefully, set them side by side in an enamelled pot, and pour lukewarm water halfway up the apples, adding a tablespoon of sugar or, if you wish to indulge, 1/2 bottle of white wine, gooseberry wine or redcurrant wine mixed with water.
Set the pot over a gentle heat so the apples steam tender without falling apart. When the apples are tender and clear, lift them out, set them on the dish the apple cake is to be arranged on, close together side by side, and fill the core openings with the jelly.
When the apples are quite cold, pour the cooked vanilla custard over them; the custard should come level with the apples.
The custard: Whisk the cream or milk, the egg yolks, the sugar and the vanilla together cold in an iron pot, place over the heat, stir until it just comes to the boil, take off, stir until cold, and then pour over the apples in the dish.
Place the cake in a hot oven and bake about 1/2 hour, or until the custard layer has set. The apple cake should be served cold and garnished with stiffly whipped cream.
