Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Clarified meat-stock jelly: ½ l stock, 5 gelatine leaves, egg white + eggshell for clarifying, 1 tbsp sherry/Madeira. Brought to a boil, left to stand 10 min, strained, moulded in layers with fish/shrimp/vegetables and turned out. Erken & Steen, 1900.

Grunnoppskrift på aspic – klaret, gelédannet kjøttkraft – fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Egghvite og eggeskall brukes til å klare kraften slik at geléen blir blank. Aspic var selve fundamentet i tidens kalde anretninger, der fisk, reker eller grønnsaker ble støpt inn lagvis.
Clarify the stock
Whisk the meat stock, soaked gelatine, egg white, crushed eggshell and the sherry or Madeira together cold. Set over the heat and bring to a boil.
Steep and strain
Take off the heat, cover and let stand 10 minutes. Strain off the clear liquid.
Add the first layer
Rinse small moulds with cold water. Pour in a little aspic, and when it is nearly set, add filling such as finely chopped fish, cooked finely cut vegetables, shrimp or finely cut lettuce.
Build up the layers
Pour more aspic over, and continue in layers until the mould is full.
Turn out
Turn the aspic out once it is completely set.
