Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Orange sorbet: sugar syrup infused with citrus peel, mixed with the juice of 12 oranges and 2 lemons, then frozen. No cream. From Erken & Steen 1900, serves 6–8.

En ren fruktsorbet uten fløte – merk det engelske ordet «crushed» om sukkeret. Frysemetoden med salt og knust is forklares i den etterfølgende Ananas-is-oppskriften.
Draw out the peel flavour
Rub a little of the sugar against the orange and lemon peel so the sugar absorbs the aromatic oils.
Cook the syrup
Boil all the sugar with the water for 10 minutes. Let the syrup cool a little.
Add the juice
Squeeze the juice from the lemons and oranges and stir it into the lukewarm syrup.
Freeze
Freeze the mixture. The original uses an ice-cream churn with a freezing mixture of salt and crushed ice; today the mixture is poured into a container in the freezer and stirred every 30 minutes until frozen (or churned in an ice-cream maker). Serves 6–8.
