Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Pineapple sorbet: sugar syrup boiled and skimmed, mixed with the juice of 8 lemons and pineapple cubes, then frozen with a salt/ice freezing mixture. From Erken & Steen 1900, serves 12.

Cook the syrup
Boil the sugar with the water for ¼ hour and skim well.
Add the fruit
Add the juice of the lemons and the pineapple cut into cubes. Let the mixture cool.
Freeze
Freeze the mixture. In the original, the ice mould is packed in layers in a freezing mixture of 1 part salt and 3 parts finely crushed ice. Today the mixture can be frozen in a container with stirring every 30 minutes, or churned in an ice-cream maker. Serves 12.
