Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Apple cake I from «Kogebog for skole og hjem» (1900): apple compote (apples boiled with a little butter and sugar) layered with butter-fried, sugared rusk crumbs in a mould and baked 1 hour. Served with or without whipped cream.

Den klassiske «tilslørte bondepiker»-typen eplekake fra «Kogebog for skole og hjem» (1900): lag av eplegrøt og smørstekte, sukrede kavringsmuler. Den enkleste av bokens tre eplekaker.
Cook apple compote
Peel the apples, cut them into thin slices and boil them tender in the water, covered.
Stir in butter and sugar
When the apples are tender, vigorously stir in 75 g butter and 100 g sugar. Let cool.
Fry the rusks
Fry the crushed rusks together with the rest of the butter and sugar until light brown.
Layer up
Layer the rusk mixture and the apple compote in a greased mould.
Bake and serve
Bake the cake for 1 hour. Serve with or without whipped cream.
