Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Queen Louise pudding from 1900: a warm egg custard with vanilla and gelatine that must not boil, cooled and mixed with sherry and stiffly whipped cream. Set in a mould, served with red sauce.

En fornem sherry- og vaniljesmaksatt fløtepudding oppkalt etter en dronning Louise, fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Gelatinen tilsettes her allerede i den varme kremen, en litt uvanlig fremgangsmåte for tiden.
Heat the custard
Put the egg yolks, sugar, vanilla, gelatine and 3 dl of the cream into a pot. Heat, stirring, to boiling point, but do not let it boil. Take the pot off the heat.
Cool
Let the custard cool well.
Add sherry and cream
Stir in the sherry and fold in the rest of the cream, which has been whipped stiff.
Set in the mould
Fill into a mould rinsed in cold water and place in the cold until the pudding is firm.
Serve
Turn out and serve with a red sauce.
