How to make it

  1. 1

    Clean and slice

Clean the fresh mushrooms carefully, but do not wash them. Cut them into medium-thick slices.

  2. 2

    Dry

Spread the mushrooms out on an iron tray covered with thick white paper. Dry them in the sun or in a lukewarm oven, turning them often.

  3. 3

    Store

Fill paper bags or stoneware jars with the mushrooms and cover them. Store in a dry, cool place.

  4. 4

    Use

Pour boiling water over the dried mushrooms, but drain off the water straight away. Chop the mushrooms coarsely or use them in slices. They are used for sauces, soups and stews.
