Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Prune pudding from Erken & Steen 1900: prunes are cooked tender with sugar and lemon, gelatine is dissolved in the juice, prunes and juice are set in a mould. The stone kernels can be used. Served cold with cream. Serves about 6.

Cook the prunes
Place the washed prunes in the cold water, add sugar and lemon extract, and cook until they are well tender.
Use the kernels
Remove the stones, crack them and scald the kernels, which can be used in the pudding. Cut up the prunes.
Dissolve the gelatine
Soak the gelatine and dissolve it in the warm prune juice.
Mould and set
Place the prunes in a water-rinsed mould and pour the juice over. Let set in the cold.
Serve
Turn out and serve cold with cream.
