Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Snøballer from Erken & Steen 1900: a cooked choux dough of butter, flour and water with eggs and sugar, shaped as small balls and deep-fried pale golden in lard. Served warm with icing sugar. Serves about 8.

Make the dough
Melt the butter, stir in the flour and add the boiling water. Stir well and cook until the dough pulls away from the pot.
Cool
Take the dough out and let it become completely cold.
Stir in eggs
Stir in the eggs, two at a time, and finally the sugar.
Deep-fry
Drop the dough by the spoonful as small balls into boiling lard and fry them pale golden.
Serve
Serve the puffs warm with icing sugar.
