Thinly cut ham slices are brought to a boil in cold water if the ham is very salty, moistened with a very little vinegar, and sprinkled with a touch of sugar.
Lightly browned in the pan in a very little melted butter, if necessary. Set on a warm dish.
The pan is cleaned; butter is melted in it. The eggs are cracked and carefully put in, the yolk to remain whole; when the white has set, the eggs are lifted out with a flexible palette knife and placed on the dish on top of the ham.
