The flanks are beaten a little with the back of an axe, divided into 2—3 parts and cut into suitable pieces.
Fill with meat cut from the shoulder along the grain in finger-thick slices; this is beaten lightly and laid in layers with strips of pork lengthwise over the half flank.
1 tablespoon salt, 1 tablespoon sugar, 1 tablespoon finely chopped onion, 1 teaspoon saltpeter, 1 teaspoon pepper and 1 teaspoon ginger are mixed together and sprinkled between each layer.
The other side of the flank is laid over, and the rolls are sewn together with strong linen thread. Lies in the brine for 8—14 days.
The roll is sewn into a piece of clean cloth, put into boiling water and boiled for 1½ to 2 hours depending on size. Then placed under a press.
