The herring should preferably be cleaned whole through the gills, washed well, then have the lukewarm water and the spices poured over it, likewise the onion, which is cleaned and cut into slices.
When the pot boils, the herring is tender. Take the fish out and keep it warm. Strain the stock.
Melt the margarine, stir in the flour, thin with the stock — about ½ litre — simmer gently for 10 minutes, salt further to taste. Pour the sauce over the fish.
NB. If, when cleaning the fish, you can pinch out the bone, so much the better; the stock then boils down with the bones for 10 minutes and becomes stronger thereby.
