The herring should lie 4–5 hours in fresh, cold water; the water is changed a couple of times.
Before the herring is eaten, it is taken up, the water drains off well, and the herring is served with vinegar, onion and pepper.
NB. The herring can also be cleaned, with head and tail removed, before it is served.
Another way is to cut the cleaned herring into 2–3 pieces on the slant, laying it in a stoneware dish in layers with various spices. For 5 herring: 10 whole peppercorns, 2 bay leaves, ½ tablespoon sugar, 1 cleaned, finely cut onion, 2½ dcl vinegar and 1½ dcl water.
