The fish and the pork are ground once or chopped together, seasoned with pepper and salt, and thinned with milk; for 0.5 kg take about 1.5 dcl milk.
Make the patties as ordinary rissoles, brown them quickly on both sides in browned margarine. Pour the following sauce over them:
Brown the margarine and flour together with the onion and thin with the fish stock; simmer gently for 5 minutes.
The fish stock is made by boiling down skin, bones and heads; put these in the pot, pour on cold water so that it covers the fish, and add 1 heaped teaspoon of salt; let it boil ½ hour; skim well.
