The mackerel, which must be freshly caught, is cleaned, the blood streak and gills removed; but do not remove the dark membrane in the belly. Wash the fish well so all blood is removed.
The mackerel is laid belly up in a crock or tub with a good layer of salt in the bottom. Fill coarse salt into the belly of the fish.
Sprinkle salt between each layer and pour over boiled, cold brine. 1 l salt to 4 l water.
The brine must stand over the fish the whole time, and a weight is placed on top. The tub is kept in a cool place; keep a lid on it.
If the brine must be boiled up after a time, it is skimmed well, boiled 1/4 hour and poured cold over the fish again.
