The berries, preferably a mix of different kinds, are washed, cooked down well with the water, strained, and put back on the fire with the sugar.
The potato flour is mixed with 2 dcl. of water, the pot is lifted off the fire, the thickening is stirred in quickly, put back on the fire, and brought to a boil.
N.B. As soon as fruit puddings are cooked, they are turned out. If it is in a glass bowl, rinse it with cold water, and place a spoon in the bottom; pour the pudding right onto this.
N.B. Fruit pudding is eaten with sweet milk or thin cream.
N.B. The apple peelings are washed, put on the fire with cold water, cooked down, and used for apple soup. The same is done with rhubarb peelings, which are used for rhubarb soup.
