Stir the hops, boiling water and rye flour well together, let cool, then add the yeast; set it aside to ferment.
After a full day and night, add the barley flour.
Knead this into a stiff dough, shape it into small cakes and dry them in a warm place, turning them repeatedly.
Pressed yeast can be kept for up to 3 weeks if placed in a cold and preferably dark spot, laid in a crock and covered with fresh, cold water that must be changed daily.
