Remove skin, blood and meat fibres as well as any gristle; cut the fat into small pieces, put it in a thick iron pot, and add cold water, enough to cover the fat.
Set the pot over the fire, bring it to the boil without stirring, skim well and let the pot stand over very gentle heat, stirring now and then so the fat does not catch and burn; cook about 4 hours (it need not be 4 hours at a stretch).
Skim off the fat, let it stand 5 min., strain it through a sieve lined with a piece of thin cloth; set it aside until it is cold and set, and it is now ready for use in cakes, for frying and cooking meat and fish, and so on.
It can be used over and over again, but must always be strained between each time.
Cooked and rendered fat does not take as long to melt; it is best melted in a pot or pan by itself, that is, not together with uncooked fat.
All fat skimmed off stock can be boiled until all the water has evaporated, then strained and fried in.
N.B. Store the fat covered.
