Original 1900 recipe

Veal fricassee from 1900: veal shoulder or breast boiled tender in salted water, cut into pieces and tossed in a roux of butter, flour and cooking stock; can be flavoured with curry and served with rice.

En klassisk hvit kalvefrikassé fra Erken & Caroline Steens «Kogebog for skole og hjem» (1900), der kalvekjøtt kokes mørt og vendes i en smørjevnet kraftsaus. Kan varieres med karri og ris.
Boil the meat
Wash the veal (shoulder or breast), break it up and put it into boiling, salted water. Take it out once it is tender, strain the stock and cut the meat into suitable pieces.
Make the sauce
Melt the butter, stir in the flour and thin little by little with about 7.5 dl of the stock. Let the sauce simmer for 5 minutes.
Heat the meat in the sauce
Put the pieces of meat into the sauce and bring the whole thing to the boil.
Variation
The sauce can be flavoured with curry powder or with vegetables boiled separately. For the curry variant, ½ tsp curry powder is stirred into the butter and flour, and boiled rice is served with it.
