Veal fricandeau from 1900: finger-thick slices of veal leg larded with fatback, floured, browned in butter and braised for 15 min under a lid in meat stock and cream.

Fricandeau er en fransk-inspirert rett av tykke, spekkede kalveskiver som stekes og surres møre i kraft og fløte. Fra Erken & Caroline Steens «Kogebog for skole og hjem» (1900).
Cut and lard the meat
Cut the veal, preferably from the leg, into finger-thick slices. Pound them and lard with strips of fatback.
Season and flour
Sprinkle over mixed salt and pepper, and dredge the slices in wheat flour.
Brown in butter
Fry the slices in the pan in the browned butter until they are nicely browned.
Braise until done
Pour over the meat stock and the cream, and let it simmer gently under a lid for about 15 minutes.
